Whether you’re a beginner or a pro looking to add to your skills, buttercream basics is always a great place to start and a great foundation to build from.

In this class we aim to cover and learn all the basics on how to get a flawless buttercream finish. The skills learnt in this class can be easily transferred and replicated using a variety of finishes such as Swiss méringue, ganache, American buttercream and many more. 

Having a good and clean finish is the base of any cake decoration. A sharp edge and clean finish will certainly help when it comes to advanced techniques such as applying fondant, edible lace, edible images etc.

The principles that will be learnt in this class will be as followed:

1.Stacking of sponges.
You will learn how to correctly stack multiple layers of sponge together including how to correctly fill and dam each layer. You will also learn how to fix any bleeds of filling and how to prevent your cake from looking lean.
2. Cake levelling.
As part of stage, one is important to learn the various way how to level a cake from cutting the tops and what tools to use to how to heighten certain parts of the cake to ensure all sides are equal height.
3. Cake filling.
Different fillings act differently on cakes depending on filling consistency and temperature. You will learn how to manipulate your fillings to suit your cake situation.
4. Crumb coating.
Once you have gained the understanding of all the prior steps you will learn what and how to crumb coat your cake. You will learn the consistency your buttercream needs to be to cover your cake and how to fix any issues that may arise such as crumbling.
5. Sharp edges.
You will learn how to ensure you get a sharp edge every time regardless of how lean your cake may or may not be. This will be done using the Pro-Froster. You will also learn the difference between different tools.
6. Final coats & finishes.
You will learn how to get a final finish using either a side scrapper or Pro-Froster and understand the difference in looks and how to use specialised scrappers to attain different looks and styles.
7. How to make chocolate drip.
You will learn how to make and colour chocolate drip and the correct consistency needed to get a flawless drip.
8. How to dress your cake.
You will learn how to complete your cake using a variety of flowers to get that professional bespoke look. You can also use added extras such as metallic leaf, fabric or edible lace at a slight extra cost.
